This downtown, upscale restaurant should be renamed “Brothers” in honor of Brad and Wes Ebey, the uber talented executive chefs and owners. Natives of Longview, both are classically trained chefs and graduates of Le Cordon Bleu.  For appetizers, we went with Brussels sprouts, roasted in a lovely concoction of competing but complementary favors of Thai chile and soy caramel and served with crispy pancetta. We moved onto the Texas prawns, which were poached and served with garlicky yogurt, radish, cucumber, red onion, chile, and sesame. The elk chop was served bone in, tender, and rare, with ginger sake–marinated pineapple and a bleu-and-bacon-stuffed baked potato alongside. Our fish-loving friend had plenty of delicacies to choose from, as four of the eleven mains were pescatarian friendly. He was over the moon about his seared rare tuna, served with a Thai coconut curry. We ended this perfect evening with a shared dessert—a creamy chocolate torte with yummy layers of mousse, chocolate cake, pralines, and strawberries.
