Polished, posh, just formal enough to feel special—that’s Silo, both here and at its Alamo Heights location. A changing but excellent cadre of chefs has kept the standards high and the dishes on point. We still insist on the signature chicken-fried oysters, one of the first dishes we first tried at Silo more than a decade ago, dressed for the season with sautéed spinach, tart apples, and mustardy Hollandaise. But there are menu updates too; for example, charred shishito peppers with Parmesan and spicy mustard aioli, as well as Prime steaks, beautifully seasoned and as perfectly cooked (maybe better) as at any big-name steakhouse. Attentive servers gracefully glide between the semi-open kitchen and the glittering banquettes and tables. San Antonio casual is acceptable, but this is one place where dressing for the occasion feels right.
