First it was a hole-in-the-wall taco stand on Singleton, hailed in 2016 by Bon Appétit as one of the fifty best new restaurants in the nation. In its next incarnation, in Bishop Arts, it was a tiny taqueria with the same authentic $2 Monterrey-style street tacos and $4 open-faced quesadillas, and everyone loved its breezy alfresco patio’s funky Oak Cliff sensibility. Now, owner Luis Olvera has moved Trompo to the Jefferson Tower, a storefront with nicer seating, a sidewalk patio, and a large menu that offers hearty cups of elote, beef-and-pork sliders, and empalmes: corn tortillas stacked and stuffed with cheese, refried beans, and carnitas or barbacoa. There’s also a bar now, a major addition to the beverage menu of Mexican Cokes, Jarritos fruit sodas, house-made juices, and Topo Chico.
