Highlights of this exquisite nine-item feast (for us) included Kaluga caviar in a tiny jar on ice, with yuca crisps and crème fraîche, and a swoon-worthy Wagyu strip loin—tender, buttery, thin-sliced, sublime. Equally transcendent, a king crab crudo, sprinkled with roasted corn, pearly roe, and tiny pansies. Chef’s choice for sushi featured ruby-colored bluefin sashimi and delicate, translucent shima-aji (striped jack) nigiri—both impeccably fresh tasting.
